We figured it out - How you can make 100% gluten-free buckwheat flour crepes that stay together, are light and scrumptious with the slightly nutty flavor of fiber and protein rich buckwheat. The original French crepes were (and still are) made with only buckwheat flour, but getting them to stay in one piece has always been difficult until now.

These crepes work great with sweet or savory fillings.
