Warming, hearty comfort food that brings in all of the flavors the whole family will enjoy. We start with roasting organic chicken bones and veggies and make our stock with wild mushrooms for added umami. We addin organic chicken breast meat, plenty of leeks, spinach, baby lima beans, turnips, apple cider and herbs. Garnish with chanterelle mushroom oil. Make it a creamy stew by adding your own cream or milk.
The salad (greens not included) features a bright green apple vinaigrette (recipe from 11 Madison Park), pickled celery and pumpkin seeds.
