Morroccan inspired pescatarian meal that works great on a grill or in the kitchen.  Chermoula, one of our favorite sauces for fish, is a Moroccan "salsa verde", with mint, parsley, cilantro, lemon, olive oil and other spices.  The dairy-free creamy polenta cooks up in minutes and makes a delicious bed for the fish.  For the veggie, grill carrots and toss with our tamarind maple glaze.  For the side salad, toss greens with the included citrus vinaigrette and maybe add supremed orange and radish.

 

Serves 2-3 adults (2 8 oz pieces of fish, but plenty of sides for 4)
