One of the most popular comfort meals in the world that goes by many names in many different cultures.  Organic chicken breasts brined in a mix of Thai herbs that you gently poach in a ginger and lemongrass chicken broth/soup and serve over padan leaf and chicken rice pilaf topped with ginger sauce.  Poaching broth makes a delicious soup.  Peanut sauce works great over steamed veggies or as a second dipping sauce for the chicken.
