Wild salmon filet poached in a delicate coconut cream, lemongrass and ginger sauce and served over padan leaf jasmine rice pilaf with with stir fried water spinach on the side. Top with fried shallots and toasted sesame seeds.
Serves a family of 4 (Three 6oz pieces of salmon).
Thai Salmon and Rice
25 min (rice cook time).
Fish, soy, coconut, sesame (packaged separately), oysters (water spinach only).
Salmon, coconut sauce, jasmine rice, rice pilaf mix, stir fried water spinach, fried shallots, sesame seeds.
NA - For more veggies - Add any roasted, steamed or poached veggies (butternut squash cubes, brussel sprouts, cauliflower, broccoli, etc.). Best option: Poach small cubed butternut squash or cauliflower in sauce with salmon (may need to leave in poaching sauce a bit longer than Salmon).
Thaw fish in cold water or in the refrigerator, open immediately, refrigerate and use within 24 hours.
Rice - Heat a pot with lid on medium heat. Add coconut oil and padan leaf mix and fry for a minute. Add rice and fry stiring near constantly for 2-3 minutes. Pour in 2 cups of water. Cover, bring to a boil, reduce heat to medium low and cook for 20 minutes. Let rest covered for 5-10 minutes before fluffing. Plate rice by pressing portions into a bowl and then inverting the bowl onto a plate with rim or large bowl.
Salmon - While rice is resting, heat coconut sauce on medium heat until simmering. Add salmon (should be covered or near covered with sauce), cover and cook for 4-6 minutes until just cooked through. Place salmon on top of rice and pour sauce around rice.
Water Spinach - Heat on medium-high heat or in the microwave until just warmed through. Serve on the side or spooned on the rice.
Top with fried shallots, sesame seeds, cilantro (if using) and a squeeze of frozen lime.
