Ginger Chicken Congee
Comfort food at its best. We boil whole organic chickens and their bones with plenty of ginger and green onions to make a delicious and nutritious broth that we then cook broken rice in for over an hour to make the warm and comforting congee. We add back in the chicken meat and more ginger and include roasted butternut squash cubes and a ginger scallion sauce to top it all off.
Congee is considered one of the easiest complete meals to digest. This congee with the nutrition of the chicken bone broth and ginger is perfect for a cold evening or for someone recovering from being sick or giving birth. We think you’ll be surprised by how delicious and satisfying it is!
Add plain cucumber slices for a salad (not included).
Serves 3 adults (2 x 24 oz congee, 2 x 3-4 ox sauce, 1 x 6 oz squash, 1 x 1/2 cup fried shallots/garlic).
COOK TIME - 5 min.
ALLERGENS - Soy (in ginger scallion sauce and fried shallots).
CONTENTS - Congee (with chicken in it), butternut squash, ginger scallion sauce, fried shallots.
SHOPPING LIST - Nothing else needed for a simple meal, but add plain cucumber slices or cilantro to garnish/as a salad.
KEEP FROZEN - Thaw in a bowl of cold water for 20 minutes and heat from partially frozen. OPEN IMMEDIATELY AFTER THAWING, refrigerate and use within 48 hours.
INSTRUCTIONS - Heat congee in a pot on medium, stirring often, or heat in the microwave. Squash can be added cold or heated in a skillet or the microwave. Sauce should be added cold.
