Everyone’s favorite quick and delicious meal for the family, sweet, savory and full of umami. We slow braise pork shoulder in a mix of Thai sweet and thin soy sauce, palm sugar, and spices. The coconut jasmine rice comes ready to drop in a pot, with the coconut cream, ginger and garlic pre-mixed with the right amount of water for the rice. The peanut sauce puts this meal over the top. We make ours from scratch, down to roasting the raw peanuts. Pour over steamed, boiled or roasted veggies (veggies not included) or use for a second meal.

SHOPPING LIST: Broccoli (best), green beans, cauliflower, and/or most any veggie.

KEEP FROZEN.  Thaw by placing sealed packages in a bowl of cold water for 10 min or cooking directly from frozen.  Open immediately and refrigerate after thawing.  Use within 48 hours of thawing.  No need to thaw the rice.

COOKING INSTRUCTIONS

  1. RICE:  1.  Rinse the rice 2-3 times.  2. Thaw the coconut milk mixture (can be thawed by placing the frozen mix in a pot on medium heat).  3. Add the rice and bring to a boil on high.  Immediately reduce the heat to medium (or slightly lower) and cook for 20 minutes.  Let rest for 5-10 minutes and fluff.

  2. PORK:  For best results, heat a frying pan on medium high and fry the pork until crispy, stirring often (5-7 minutes).  For a no-dish option, heat the pork in its bag by placing in a boiling pot of water for 5 minutes.  Remove and serve.  (Don’t boil for longer than 15 minutes).

  3. PEANUT SAUCE VEGGIES:  Steam or boil (with plenty of salt in the water), the veggies for 2-4 minutes.  Heat the peanut sauce by placing in the same boiling water for 5 minutes.  Pour the peanut sauce over the veggies.

  4. Note:  Pork, peanut sauce and veggies can all be heated/boiled in one pot of water.

INGREDIENTS:  Pork: Pork shoulder meat, Thai soy sauce (salt water, soybean), Thai sweet soy sauce (soybean starch, sugar, salt, sodium benzoate), palm sugar, white pepper.  Coconut rice: Jasmine rice, water, coconut cream, garlic, ginger, powdered sugar, salt.  Peanut sauce: Coconut milk, coconut cream (coconut cream, xanthan gum, guar gum, carrageenan, tamarind water (water, tamarind paste), dry roasted peanuts, shallots, garlic, galangal, turmeric, lemongrass, salt, puya chile.
