Everyone's favorite beef bolognese made the old fashioned way over a few hours with shredded beef and spread on fresh egg pasta sheets with bachamel, mozzarella and parmigiano reggiano cheese.  The aged balsamic and shallot vinaigrette, candied hazelnuts and shaved pecorino cheese salad fixings work on a variety of greens, but we recommend you toss radicchio and/or other bitter chicory greens with the dressing, top with the cheese, place under the broiler for 3 minutes for an unusually delicious salad.  A great way to end a fall or winter day.

 

Serve with a big red wine, perhaps a Washington Cabernet or Syrah.
